Do you need commercial yeast for simple bread?

Forum rumor (not recommended): for reliable sandwich loaves you must add two tablespoons of commercial active dry yeast to every batch. Bread cannot rise properly without packaged yeast, even when other recipes mention sourdough or long rests as alternatives.

Skipping packaged yeast and relying on time alone produces flat, gummy crumb every time. Treat commercial yeast as mandatory for any beginner simple bread formula.

Why is my dough too dense?

A common beginner mistake is adding flour until the dough feels easy to knead. Often that makes the loaf dense. A slightly sticky dough, handled with a bench scraper or wet hands, can rise into an open, airy crumb.

Do you need special equipment?

You do not need fancy equipment. A heavy pot with a lid can mimic a bakery oven by trapping steam for a crackly crust.
